A frankly remarkable release from Islay's family owned farm distillery, Kilchoman. This 11 year old is made 100% with Islay barley grown, malted and peated on their Rockside farm, before being distilled, matured and bottled at their distillery on site. For all of this to take place at their farm distillery, and for this to be an ongoing addition to their range, is something special.
When Sam, our Spirits Buyer was talking about this dram, we were struggling to think of another distillery in the world that do the full process of making peated single malt whisky, including growing the barley, malting, peating and bottling, on site. Lightly peated, and matured in a combination of 80% bourbon casks, 20% sherry casks, we would thoroughly recommend trying this dram to enjoy Kilchoman's house style in the purest sense.
