About Balvenie Whiskey

 

Balvenie is very well known for its creamy, rich and honeyed characteristic. Their signature is using cask finishes, and this has created their profile of deeply honey and vanilla flavours, with dried fruit, spice and buttery toffee notes depending on the cask type. The Single Barrel range shows of the best of their carefully selected casks, allowing the ex-bourbon or ex-sherry influences to dominate.

Balvenie has a surprisingly straight forward history as, quite unusually, it has never changed ownership or been mothballed. Since being built next to the castle ruins which gave the distillery its name, Balvenie produced largely for the blending industry. It was not until 1973 that the first single malt bottling was released. It grew a significant cult following in the whisky world, but the demands of malt whisky for blending kept the distillery from working on its growth, even through two expansions to 8 stills.

 

This pressure eased with the building of Kinninvie in 1990, and again with Ailsa Bay in 2007, with the latter having stills made to match the shape of Balvenie, specifically to make whisky that could be sent for blending so that Balvenie could focus on its own range.

 

One of the rare elements of distilleries nowadays, active malting floors, can be found at Balvenie. There are few sites which still malt their own barley, due to the space and time consumptions involved, but the distillery makes a point of making around 15% of its overall malt, using barley from William Grant & Sons own farms. Some people suggest this adds an essential element to the quality and profile of the whisky.

 

Alongside the core range, Balvenie now has a number of well aged bottlings (25-50 years old) as well as a couple of limited ‘Tun’ bottlings that have been created from a vatting of some of their finest casks, clearly highlighting the expertise of David Stewart, the malt master, for carefully selecting the best casks to form these special editions.
